Since going WFPB, I've loved exploring what can be done to emulate that "meaty" taste in food. I've made substitutes for everything from hotdogs and hamburgers to ground beef. Usually, we use a variety of legumes to give something that delicious taste, but I've recently experimented with something so delicious I just had to share it. I present to you the "fried chicken" potato! When I first started making these pieces of "fried chicken", I couldn't resist trying them on all kinds of food. But I've found that one of the best places to eat these yummy chicken strips is in a delicious salad. Try them out in our strawberry spinach salad, and see what you think!
