Spring Rolls

Who doesn't love a good side dish with dinner? I know I certainly do. But, you know what, sometimes those side dishes can really steal the show. In this case, that's what we have with our spring rolls. What was initially meant to be an excellent addition to our international food nights has become the focus and a star meal. I am of course, referring to our delicious spring rolls! These delicious rolls can serve as a fabulous dinner and a side dish. Serve these up with a yummy dipping sauce, and you might just think you've stumbled into the holy grail of food.

So, if you're looking for fun and versatile food, give these a shot. Our family loves them, and we hope you will too!

Ingredients
- Butter lettuce or lettuce of your choice
- Cucumber, sliced into match sticks
- Carrots, julienned, chopped, or sliced into match sticks
- Mango, sliced (or fruit of your choice) – optional
- Fresh noodles, such as pasta zero, yam, rice, etc. You can find these in the produce section near the tofu
- Green onions, chopped
- Any other veggies of your choice
- Rice paper wrappers
Instructions

1. Dip rice paper wrappers into a bowl of water, one at a time, and remove them quickly so they do not get too soft
2. Place the wet wrapper on a clean surface and fill it with veggies, noodles, fruit, etc.
3. Fold in the left and right sides, then front and back, until you have a roll
4. Serve with your favorite dipping sauce
5. Enjoy!
