Here's another hearty soup we'd like to call an "all-season soup." When I think of soup, I immediately go to a cold winter day where you're eating some hot soup bundled up in your house. But this soup has a bit of a different vibe. It's creamy but also provides a nice crunch to it. It's savory yet packs a little hint of sweetness to it as well. It's really the perfect all-around soup for whatever occasion you're looking to have some. And, to top it all off, it's incredibly nutritious and healthy for you, with all kinds of wonderful ingredients packed into the bowl! So go ahead and try some out. We think it's delicious, and we hope you will too!

  • Ingredients

    • 8 cups cooked white beans
    • 1 onion, chopped
    • 2 carrots, chopped
    • 4 stalks of celery, chopped
    • 1 box low-sodium veggie broth
    • 2 tsp Better than Bullion low sodium vegetable
    • 1 lemon juiced
    • 1 tsp rosemary
    • 1/2 tsp crushed red pepper
    • 1 8oz bag of spinach

    Instructions

    1. Water sauté onions, carrots, and celery until soft
    2. Add lemon juice, rosemary, crushed red pepper, better than bullion, and beans. I corporate well then immersion blend until smooth
    3. Once hot, add spinach, stir, and serve
    4. Enjoy!
